What's the origin story for your food business?

​

Almost ten years ago, Daniel Moncayo, his brother Xavier and their mother Cecilia started Ceviche & Co. which serves ceviche and tapas from Ecuador, a country containing portions of the Amazon Jungle, the geographical center of the world, unique fish and exotic fruits, and home to the Galapagos Islands.

Why is it important for you to bring food to the world?

 

"Our mom was the inspiration for the truck, and that’s what made it such a big hit," says Xavier Moncayo. "There’s not really an Ecuadorian food truck or restaurant in the area, and we thought, let’s bring a taste of another part of the world to this area."
