Why did you decide to bring this food to the world/your community?

​

“Growing up in the Excelsior district of San Francisco, I was around a lot of taquerias, so I wanted to add a bit of that Latin fusion to poke cuisine. At first, people didn’t really get it. But now we have a lot of regulars, and I know them all by name.” Founder Steve Dizon tapped his family members in Hawaii for their favorite traditional poke recipes before adding his own local twists.
